Avocado Pesto Sauce

Ingredients

  • 1 avocado
  • 0.5 cup fresh basil leaves
  • 1 cup fresh spinach
  • 0.25 cup cashew pieces
  • 0.25 cup of roasted pine nuts
  • 0.5 lemon juice
  • 2 tbs olive oil
  • 1-2 garlic cloves
  • 0.5 tsp kosher salt
  • ground pepper
  • 0.25-1 cup pasta water
  • 0.25 cup oat milk

Directions

  1. Soak cashews for a few hours to overnight.
  2. Chop/mince all ingredients.
  3. Blend everything except the pasta water.
  4. Mix in with pasta and pasta water.
  5. Top with tomatoes and chicken.
