Banana Bread

Ingredients

  • 2 cups almond flour
  • 0.25 cup arrowroot flour
  • 0.25 cup coconut flour
  • 0.25 cup ground flax seed
  • 3.5 tbsp coconut sugar
  • 1 tsp baking soda
  • 0.5 tsp cinnamon
  • 0.25 tsp salt
  • 2 ripe bananas + more for topping
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup walnuts or pecans
  • 1/2 cup chocolate chips (optional)

Directions

  1. Mix wet ingredients in one bowl, dry in the other.
  2. Combine slowly, stirring with a rubber spatula.
  3. Add in the nuts and optional chocolate.
  4. Don't worry about mixing too much (no gluten development), but the arrowroot flour will thicken quickly, so get the bread in the oven as fast as possible once mixed.
  5. Pour into bread dish. Top with more banana and optional chocolate chips.
  6. Bake at 350 for 45 minutes.
