Black Bean Stew

Ingredients

Pepper Paste

  • 1 dried arbol peppers
  • 2-3 dried chipotle peppers
  • some water

Stew

  • 2 tbs veg oil
  • 0.5 red onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 tsp ground coriander
  • 2 tsp ground cumin
  • 0.5 tsp ground cinnamon
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 1 can black beans
  • 1 can chickpeas
  • 480ml water
  • 2 tbs tomato paste
  • 2 tbs soy sauce
  • 1.5 lime juice
  • 30g dark chocolate

Plantain

  • plantain
  • coconut oil
  • salt

Directions

  1. Hydrate peppers with boiling water off heat in bowl for 15 minutes.
  2. Blend peppers with some fresh water (used water might be too bitter).
  3. In pot, cook onions and garlic in oil.
  4. Once softened, add bell pepper.
  5. Add spices, cook for a bit.
  6. Add pepper paste, black beans, chickpeas, tomato paste, soy sauce, lime juice, and water.
  7. Simmer for 20 minutes.
  8. Add more salt/lime juice if needed.
  9. Once everything is cooked, stir in chocolate.
  10. For the plantains, cut, and saute in coconut oil. Season with salt.
  11. Serve with rice or quinoa and salad.
