Cast Iron Pizza

Ingredients

  • 400g flour
  • 10g kosher salt
  • 4g instant yeast
  • 275g water
  • 8g extra-virgin olive oil
  • 1.5 cups red sauce (jar is fine but see short rib sauce)
  • 12 ounces low-moisture mozzarella
  • whatever toppings

Directions

  1. Combine flour, salt, yeast, olive oil, water in bowl and mix into dough
  2. Cover and leave on counter for 8-24 hours.
  3. Cut in half and roll into balls.
  4. Coat cast iron pans in olive oil.
  5. Place dough balls in cast iron pans, cover and let site for 1-3 hours.
  6. Preheat oven to 550 degrees.
  7. Pre-cook any toppings.
  8. Spread dough out in each pan, add toppings.
  9. Bake pizzas for 12 or so minutes until top is done.
  10. Bottom will likely need to be finished on stovetop.
  11. Once done, move onto plate and let sit for 10-15 minutes before cutting.
