Cast Iron Pizza

Ingredients
- 400g flour
- 10g kosher salt
- 4g instant yeast
- 275g water
- 8g extra-virgin olive oil
- 1.5 cups red sauce (jar is fine but see short rib sauce)
- 12 ounces low-moisture mozzarella
- whatever toppings
Directions
- Combine flour, salt, yeast, olive oil, water in bowl and mix into dough
- Cover and leave on counter for 8-24 hours.
- Cut in half and roll into balls.
- Coat cast iron pans in olive oil.
- Place dough balls in cast iron pans, cover and let site for 1-3 hours.
- Preheat oven to 550 degrees.
- Pre-cook any toppings.
- Spread dough out in each pan, add toppings.
- Bake pizzas for 12 or so minutes until top is done.
- Bottom will likely need to be finished on stovetop.
- Once done, move onto plate and let sit for 10-15 minutes before cutting.
