Crab Cakes with Homemade Mayo

Ingredients

Garlic Mayo

  • egg yellow (you can use the whole egg for thinner mayo or add water)
  • 0.5 lemon juice
  • 1 clove garlic, grated
  • 1.25 tbsp dijon mustard
  • salt and pepper
  • a few tablespoons canola or vegetable oil

Crab cake

  • 1 egg white (or whole egg)
  • 0.5 lb pre-cooked crab or imitation crab
  • 2 slices of bread
  • 0.5 bell pepper
  • 1 egg
  • 0.5 lemon zest
  • parsley (or other herbs)

Directions

  1. Combine mayo ingredients in glass, with oil on top.
  2. Use stick blender to blend into mayo.
  3. Blend bread to make breadcrumbs
  4. Chop up bell pepper.
  5. Add ingredients and mix.
  6. Shape into patties.
  7. Cook in pan in butter.
