Enchiladas Rojas

Ingredients

Enchilada Sauce

  • 6-7 dried guajillo chiles
  • 0.25 yellow bell pepper
  • 1 clove of garlic
  • 0.75 cup chicken broth
  • salt to taste
  • lime juice to taste

Enchilada

  • tortillas
  • block of mozzarella
  • rest of yellow bell pepper
  • vegetable oil

Toppings

  • lettuce
  • salsa
  • sour cream

Directions

  1. Blend enchilada sauce ingredients.
  2. Dip tortillas in sauce, then fry in oil in pan on one side until firmish.
  3. Flip and fill. Wrap up and cook until cheese is melted.
  4. Plate with toppings.
