Enchiladas

Ingredients

FIllings

  • 1 large can of chicken
  • 1/2 onion, diced
  • 1 cup salsa
  • 1 can green chiles
  • 1 red bell pepper, diced
  • 1" cream cheese block
  • 5 shakes hot sauce
  • 1 can black beans
  • 1 can corn
  • 1 cup shredded cheese

Sauce

  • 1 can red enchilada sauce

Directions

  • Mix fillings in bowl
  • Brush both sides of tortillas with red enchiladas sauce. Fill each tortilla with 1/2 cup of mixture. Wrap and place in casserole dish. Repeat until mixture is used up. Pour remaining sauce on top.
  • Bake for 30 minutes at 350. Then top with one cup shredded cheddar cheese. Bake an additional 10 minutes.
