Ethiopian Hummus

Ingredients

Hummus

  • 80g roasted sunflower seeds
  • 200g chickpeas
  • 2 tbsp garlic olive oil
  • zest of a lemon and juice of 0.5 lemon
  • 1 tsp jalapeno
  • 0.5 tsp salt
  • 1 tsp berbere spice

Berbere Spice

  • 10 dried arbol chili peppers
  • 2 tbsp paprica powder
  • 1 tsp salt
  • 1 tsp coriander
  • 0.5 tsp dried ginger
  • 0.5 tsp cardamom
  • 0.5 tsp nutmeg
  • 0.5 tsp whole all spice
  • 0.25 tsp whole clove

Directions

  1. Soak chickpeas overnight or 8 hours, then simmer in water + 1-2 inches for 2 hours.
  2. Grind all berbere ingredients.
  3. Peel the chickpeas when done.
  4. Toast sunflower seeds in pan.
  5. Grind the sunflower seeds in processor.
  6. Add half chickpeas and all other ingredients + a little water and blend.
  7. Add rest of chickpeas and blend until desired smoothness, adding water when needed.
