Green Thai Curry

Ingredients

Green Curry Paste

  • 20 green chili peppers (40g)
  • 50g yellow bell pepper
  • 50g green part of leek and/or scallion
  • 10g ginger
  • 1 tablespoon garlic oil or 40g garlic
  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 8 spinach leaves
  • 0.5 tsp salt

Curry

  • cooked white rice
  • 2 cans of coconut milk (800ml)
  • 400ml water
  • 2 tbsp cane sugar
  • 4 tbsp soy sauce
  • 200g egg plant
  • 100g green beans
  • 100g mushroom
  • 1 package extra-firm tofu, pan fried in oil and soy sauce
  • basil leaves

Directions

  1. Blend curry paste ingredients.
  2. Add 1 can coconut milk and curry paste to pot. bring to a boil on medium heat.
  3. Add vegetables and spices and simmer till done.
  4. Serve over rice.
