Ital Curry

Ingredients

  • 1 red chili
  • 1 yellow bell pepper
  • 3 green onions
  • 1 thumb of fresh ginger
  • 1-2 tablespoons garlic oil
  • 1 tsp dried thyme
  • 2 1/2 tsp curry powder
  • 1 can coconut milk
  • 1 400g can chopped tomatoes
  • 0.25 cup vegetable stock
  • 400g black eyed beans
  • 0.5 butternut squash
  • 2 potatoes (russet or sweet)
  • 2 carrots
  • 1 zucchini
  • 1 bowl of greens
  • salt and pepper

Directions

  1. Cook bell pepper and green onion in garlic oil until softish.
  2. Add in ginger and red chili and cook for a minute.
  3. Add in curry powder and thyme. Add splashes of water if needed.
  4. Add in rest of vegetables and coat with mixture.
  5. Add in tomatoes, coconut milk, and vegeatble stock. Bring to boil then simmer until vegetables are done.
  6. Add in bowl of greens and cook until wilted.
  7. Serve with bread or over rice.
