Meat Sauce

  • 1 lb any combination of ground beef, pork, veal
  • olive oil
  • 1 lb bacon or turkey bacon
  • 2 carrots
  • 3-4 stalks of celery
  • 1-2 yellow bell peppers
  • 2-3 tbsp tomato paste
  • olive oil
  • 1-2 cups white wine
  • 28 oz can of whole tomatoes
  • red pepper flakes to taste
  • a few glugs of balsamic vinegar
  • 1.5 tbsp oregano, basil, thyme, rosemary, parsley
  • parmesan cheese


  1. Cut the carrots, celery, peppers into small chunks, based on preference.
  2. Cut the bacon into small chunks based on preference.
  3. Brown the ground meat in sauce pan.
  4. Remove meat and saute vegetables in meat fat. Add olive oil if necessary.
  5. Add bacon once softened.
  6. Once mixture is starting to stick, add tomato paste and stir for 2-3 minutes.
  7. Add back in ground meat and mix.
  8. Deglaze with white wine.
  9. Add canned tomato.
  10. Add spices, vinegar, salt, and 1-2 cups of water.
  11. Mix then let simmer for 2-3 hours, adding water as needed.
  12. Adjust spice levels as needed toward end of cooking.
  13. Serve with a thicker pasta type, top with parmesan cheese and parsley.
