Mushroom Shallot Omelet

  • 3 eggs
  • 3-4 mushrooms
  • 0.5 shallot
  • soy sauce
  • sweet vermouth
  • olive oil
  • butter
  • parsley


  1. Saute mushrooms and shallots in oil until almost done.
  2. Add splash of soy sauce and splash of vermouth.
  3. Reduce mixture and set aside.
  4. Add salt and parsley to 3 eggs. Beat vigorously.
  5. Heat a pan and melt some butter.
  6. Pour eggs into pan. Keep the pan moving for soft egg, allow to sit for browned eggs.
  7. Shape into omelet.
  8. Cut a hole in top and add mushroom mixture.
