Nashville Hot Chicken and Waffles

Ingredients

Marinade

  • 1 pack boneless skinless chicken thighs
  • 1.5 cups buttermilk
  • 1 tablespoon kosher salt
  • 2 tsp ground pepper

The Fried

  • 1 egg
  • 8 dashes not so hot sauce
  • 2 cups all-purpose flour
  • 0.5 cup corn starch
  • 1 tablespoon kosher salt
  • 1 tablespoon ground pepper
  • 48 ounces peanut or vegetable oil

The Nashville Hot

  • 3 tablespoons cayenne pepper
  • 1 tablespoon light brown sugar
  • 0.5 tsp paprika
  • 0.5 cup of the fry oil from above

Directions

  1. Place chicken in marinade overnight in fridge.
  2. Add egg and hot sauce to marinaded chicken.
  3. Put flour, corn starch, salt, pepper in baking dish.
  4. Put chicken into flour mixture. Mix until covered and let sit for 15 minutes.
  5. Heat oil to 350 degrees.
  6. Fry chicken in batches while monitoring the temperature of the oil and color of the chicken.
  7. Place fried chick on a paper toweled baking pan.
  8. Put Nashville Hot spices into a bowl. Dump 0.5 cup fry oil into bowl and mix. Coat the fried chicken.
