Peanut Butter Coconut Eggs

  • 1 cup natural peanut butter
  • 3 dates
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 1.25 cups unsweetened shredded coconut plus some more set aside
  • 1 bar dark chocolate


  1. Add peanut butter, vanilla extract, salt dates (pits removed) to food processor.
  2. Blend until smooth
  3. Add coconut to mixture, stir by hand.
  4. Mold mixture into balls on a parchment lined sheet pan, adding more coconut if it's too liquidy.
  5. Put in fridge until hard.
  6. Melt chocolate and dip balls.
  7. Garnish with coconut.
