Rhubarb Pie

Ingredients

Bottom Layer

  • 100g coconut sugar
  • 100g butter
  • 150g oat flour
  • 100g almond flour
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • 125 ml almond milk
  • 300g rhubarb

Top Part

  • 100g oat flour
  • 100g almond flour
  • 80g butter
  • 100g coconut sugar

Directions

  1. Preheat oven to 350F.
  2. Mix butter and sugar together with hand mixer.
  3. Add other ingredients and mix together with hand mixer.
  4. Add to greased baking pan.
  5. Add rhubarb on top.
  6. Mix top part together with hands and add to top of pie.
  7. Bake for 50-60 minutes, until top is browned.
