Tofu Cashew Herb Spread

Ingredients

  • 325 g extra firm tofu
  • 0.75 cup raw cashews
  • 2 cloves garlic
  • 0.5 lemon juice
  • 1 tbs apple cider vinegar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp kosher salt
  • 0.5 tsp ground black pepper
  • 20 g sundried tomatoes
  • 20 g fresh dill
  • 5 g fresh basil

Directions

  1. Soak cashews for a few hours to overnight.
  2. Chop/mince all ingredients.
  3. Blend everything in food process minus the herbs.
  4. Stir in herbs.
  5. Refridgerate for a few hours before using.
